Our Go-To Meal Right Now
Are you a busy mom? Whether it is chasing and entertaining the kids all day or at your job until dinner and the last thing you want to do is make a dinner that takes for ever. This is the recipe for you!
Quick healthy meals seem to be more challenging to find, but we have found one that we have been making about once a week now for a while. It is veggie and protein packed AND best of all FAMILY APPROVED! Which we all know that doesn’t happen very often when you have toddlers, they can be picky eaters, but our daughter gobbles it up and always asks for more. It is also nice because you can

do different vegetables depending on the season or what deals your local grocery store is having.
Do you meal prep? This would also be a great meal to prep a head of time. You could cut up all the veggies and throw them into a zip lock bag with the sausage and freeze them or even just have it cut and ready to make later in the week. I haven’t tried cooking a big batch yet and portioning it out for the week, but as left over this is amazing the day after, so I don’t see why you wouldn’t be able to prep this cooked for the whole week. It is also yummy in the morning to reheat it with some scramble eggs. It is nice that this is a very versatile dish!

Ingredients:
1 green bell pepper
1 orange pepper
1 Squash
1 Onion
5 Chicken Sausages(we buy the ones at Costco)
2 TBSP olive oil
2 TBSP minced garlic
2 TSP Worcestershire sauce
Salt and Pepper to taste
Serves 5
30 minute preparation
Directions:
1. In a large pan put the olive oil and minced garlic.
2. Put onions in first and let them sauté until are tender.
3. Add the rest of the veggies and sausage.
4. Add Worcestershire sauce over the mixture.
5. Cover and let them sauté until warm it is about 10 minutes or so.
6. Stir every few minutes.
Plate and ENJOY!
