Great for Snacks or Breakfast
I always try to make breakfast my biggest meal of the day! Growing up my mom always had up eat a healthy nutrient packed breakfast to help fuel us through the day. These muffins have become one of our staples in our house. They are great to have with eggs or yogurt parfait in the morning or have for a quick snack mid morning or afternoon. You do have to eat them kind of quick because they do spoil somewhat fast. Which usually isn’t a problem in our house because our daughter LOVES them.
They are also an easy and quick recipe to whip up on a Sunday night or Monday morning to have them for the week. They are also one of my favorite things to take to brunches or meetings where we need a snack, and I like that they have more protein than your ‘usual’ blueberry muffin.
Here is the recipe I have tweaked and found to be my favorite!
2 Cups Kodiak Cakes Power Cakes
1 Egg or 1/4C egg whites
1 C Milk
1 tsp Vanilla
1 C Blueberries
Set oven to 350 degrees and bake 11-15mins or until toothpick comes out clean from center of muffins.
- In a medium bowl mix Kodiak Cake Mix, milk, egg, honey and vanilla together until smooth.
- Fold blueberries to mixture above.
- Spray muffin tin with baking spray or use liners.
- Fill about 3/4 full.
- Then bake 11-15mins or until toothpick comes out clean.
This is also a great recipe to involve the kiddo(s) in! Our girl is at the stage right now where she LOVES helping in the kitchen. She does need guidance and I have to be patient with her and help her to learn, but she loves being in the kitchen with me! She loves to help measure and pour into the bowl and ‘mixa mixa mixa,’ as she says while stirring the muffins. Even though it would be easier and quicker for me to just makes these, I need to learn patiences with her and cooking and knowing she is having a blast is worth it, EVEN the bigger mess than usual.
These are also nice when doing macros, a great pre or post workout snack. A nice way to sneak protein in and still enough a muffin. Here are the macros 20c,1f,6p for 1 muffin.
