Delicious and Nutritious For the Whole Family
One of my favorite things to do on the weekend is wake up and make some sort of sweat treat; from muffins, to cinnamon rolls, to this amazing recipe of a twist on banana bread! The thing I also love about this recipe is that is is healthier for you than regular banana bread because it is made with Kodiak Cake Mix. We get our Kodiak Cake Mix at our local Costco, which I guess is a good thing because we make stuff with it ALL the time. This is an easy recipe to follow and it is also nice because you can change out some of the ‘extras’ to fit what you are wanting that day; but lets be real I usually 95% of the time ALWAYS add chocolate chips.

2½ cups Kodiak Cakes Buttermilk & Honey Flapjack Mix
1½ teaspoon Baking Powder
½ teaspoon Cinnamon
¼ teaspoon ground Nutmeg
½ cup chopped pecans, chocolate chips, cranberries, blueberries, or other nuts (optional)
2 Eggs, beaten or I have also used egg whites as well
6 ripe Bananas, mashed
⅓ cup Raw Honey
1 teaspoon Vanilla Extract
½ cup melted Coconut Oil
Instructions
Preheat oven to 350 degrees and spray bread pan with coconut oil or cooking spray.
Mix flapjack mix, baking powder, cinnamon, nutmeg and chopped pecans together.
In separate bowl, mix the eggs, mashed bananas, honey, vanilla, and melted coconut oil.
Add banana mixture to dry mix.
Pour batter into your bread pan.
Bake for 50 minutes, or until a toothpick comes out clean.
If you are making muffins bake for 20-25mins depending on oven!

This is a recipe that my girl loves helping with too, she can help measure and pour everything into the Kitchen Aid Mixer and turn the mixer on when we are ready to start mixing! This recipe does take a lot of bananas, so sometimes I will plan ahead and buy some brown bananas while I’m at the store early in the week so they are ready for the weekend baking! Or also freeze bananas once they get brown and I don’t have time to use them right away. Then all I have to do is defrost them and throw them into the mixture.
Hope you can enjoy this recipe as much as we do around our house. It usually doesn’t last more than a day or two! Because who doesn’t like freshly baked bread and a cup of coffee to start your weekend or day.
