Simple Yet Yummy
Gotta love cool spring rainy days where you can bust out some of the comfort food again and nothing is better than a bowl of Chicken Tortilla Soup and even better when it is all conveniently in your pantry at all times if you want. This makes a quick meal for you and your family or if you are needing to take a meal to a family in need, it is nice to be able to throw something together quickly.
This recipe is a recipe that was created by trial by my Mom and Granny. There were different ingredients that were tried to see which one made the best combination and yet trying to keep the recipe as simple as possible, which this was the final recipe that they landed on.
Another great thing about this recipe is you can make it up and split it into mason jars for the week or even freeze some for later. It is always nice to have meals prepped for the week and this soup makes a great meal for lunch!
I love to throw this recipe in the crockpot in the morning and have it for lunch. Letting it cook on a low temp for longer lets all the flavors blend together for more of a flavorful soup!
1 big container of canned chicken
1 box chicken broth
1 can Pinto Beans
1 can Kidney Beans
1 can Green Enchilada Sauce
1 small can Tomato Sauce
1 can Cream of Chicken Soup
1 can green chiles
Stove: add all the ingredients together and cook for about 30-45mins. Bring to a boil and then let simmer on low the rest of the time.
Crockpot: add all the ingredients together and cook on low for 3-4hrs
There are so many ways to make this your ‘own’ too, we love adding a dollop of plain greek yogurt (you could also do sour cream if your prefer), adding some fresh cilantro on top is really yummy. If you are wanting it spicier you can add in diced jalapeños or add in ‘hotter’ green chiles. And last but NOT least, who doesn’t love adding some shredded cheese, YUMMY! We also love making cheesy roll-up to go along side the soup, place some small tortillas, we do corn on a cookie sheet under the broiler in the over, sprinkle cheese on them and leave them in until cheese is melted, then take them out and roll them up. Again, who doesn’t love cheese.
